OUR HISTORY

One Friday night at a well known steakhouse in Chicago, Chef Mark Dewar’s path crossed with his soon-to-be business partner, Paul Spass.  Learning that they had both graduated from Johnson and Wales University with culinary degrees, the two men became quick friends. Both being well educated, decorated chefs, the thoughts of working together to open an upscale steakhouse in Tinley Park began to be discussed.

It was at this very moment when The Primal Cut Steakhouse was born.

OUR STEAKHOUSE?

We at the Primal Cut recognize the need for a quality restaurant offering in the surrounding suburbs of the City of Chicago. By bringing a level of service and product synonymous with a downtown dining experience, we achieve this.

Our steak program offered is unique in the fact we procure the primal, or first cut, of meats and process in house by our skilled chef.  By doing so, we retain a higher level of quality while reducing the overall cost.  These savings are passed on to our guests in the menu price.

We further diversify ourselves by dry aging our steaks in house.  The end result is a product of superior quality and taste. Finally, we do not employ a microwave or freezer in our restaurant which provides the true “proof in the pudding”.
