OUR HISTORY

One Friday night at a well known steakhouse in Chicago, Chef Mark Dewar’s path crossed with his soon-to-be business partner, Paul Spass.  Learning that they had both graduated from Johnson and Wales University with culinary degrees, the two men became quick friends. Both being well educated, decorated chefs, the thoughts of working together to open an upscale steakhouse in Tinley Park began to be discussed. It was at this very moment when The Primal Cut Steakhouse was born.

As co-owners of The Primal Cut Steakhouse, Chef Mark Dewar and Chef Paul Spass graciously welcome you to dine on globally inspired cuisine in a local, contemporary setting. With nearly fifty years combined restaurant experience, both Mark and Paul welcome you to enjoy the finest quality of food and service available!

PHILOSOPHY

We at The Primal Cut Steakhouse strive daily to provide goods and services that are reminiscent of a high quality steakhouse located in an urban setting but located away from the city center.  Not only do we save our guests time of travel from the suburbs to the city, but we also save them monies for traveling expense and the cost of paying the downtown prices.
