One Friday night at a well known steakhouse in Chicago, Chef Mark Dewar’s path crossed with his soon-to-be business partner, Paul Spass. Learning that they had both graduated from Johnson and Wales University with culinary degrees, the two men became quick friends.
Both being well educated, decorated chefs, the thoughts of working together to open an upscale steakhouse in Tinley Park began to be discussed. It was at this very moment when The Primal Cut Steakhouse was born.
